The Best Kid Approved Southwestern Bean Dip
One of our favorite snacks to make and eat together. I am sure your family will love it too.
This Best-Ever Kid Approved Southwestern Bean Dip is a gluten-free favorite at our house. Plus I am constantly giving out the recipe when we have guests.
- 15oz can black beans, drained and rinsed
- 11oz can of shoe peg corn, drained
- 1 bell pepper (any color), chopped
- 1/2 red onion, chopped
- 1/4 cup olive oil
- 1 teaspoon white vinegar
- 1 Tablespoon of your sugar substitute of choice
- Fresh chopped tomatoes
- Diced avocado
- 1/2 cup Italian salad dressing instead of olive oil
Combine all ingredients in a bowl then mix to combine. Chill in refrigerator for 30 minutes for best taste. Serve with tortilla chips. Delicious!
