Ingredients
This Best-Ever kid-approved southwestern Bean Dip is a gluten-free favorite at our house. I also constantly give out the recipe when we have guests.
Ingredients

- 15oz can black beans, drained and rinsed
- 11oz can of shoe peg corn, drained
- 1 bell pepper (any color), chopped
- 1/2 red onion, chopped
- 1/4 cup olive oil
- 1 teaspoon white vinegar
- 1 Tablespoon of your sugar substitute of choice
OPTIONAL VARIATIONS
- Fresh chopped tomatoes
- Diced avocado
- 1/2 cup Italian salad dressing instead of olive oil
Directions
Combine all ingredients in a bowl, then mix to combine. Chill in the refrigerator for 30 minutes for the best taste. Serve with tortilla chips. Delicious!
